Love this dish, Thai beef salade. Dit lovely recipe is from Shalovesfood.
Eating healthy isn’t that difficult. However you do need to know what healthy cooking is. And.. inspiration to do so! I always have a look on good blog page Shalovesfood. She loves to cook and I love her recipies. When they’re are healthy, I will share them with you as they are only in Dutch on her website:
The salade itself is made quick and easy, just cut up all the ingredients and add flavors. But Shalovesfood likes to add some extra details to make it every lovelier. So these points are just to add flavor, if you are in a hurry you can skip these.
– Use a whole steak, approximately 450 grams from good quaity and cook it as a whole. It takes a bit more time and is more difficult to get the right steak. You can also just smaller steaks or cut up in pieces upfront.
– By marinating the steak for one hour in a Thai style marinade the meat gets tender and even more delicious. If you don’t have time to marinate then just cook immediate. Make sure to add some more love to the salade (add some extra spices, like lemon juice, coriander or ginger zest).

Ingrediënts for 2/3 persons
4 sp soy sauce
1-2 sp lemon juice
1 small red pepper
zest from ginger, 2 cm
75 gram fine noodles
200 gram pods
10 small grated carrots
1 finely chopped onion
1 red pepper
15 grams coriander
zest from ginger, 1-2 cm
2 sp chili sauce
1 lime (or lemon)
1 sp fish sauce
2 ts brown sugar
2 sp soy sauce
1 cloke garlic
Marinate the steak for 30-60 min
Make sure the steak is at room temperature. Mix all the ingredients for the marinade and place the steak in it. Make sure to stir and flip over every now and then.
Preparing the salade 10 min
First make the dressing by mixing all the ingredients. Cook the pods for about 3 minutes in water with a pinch of salt. Prepare a bowl with cooked water, place the fine noodles in it. After a few minutes they are done, make sure to stir. Rinse them in cold water so they are the right temperature for the salade. Cut up the rest of the ingredients, make nice small slices. Take out the heart of the cucumber and tomato to prevent the salade to get too moist. Mix all together and add te dressing.
Cook the steak
The advise is to bake it in butter but you can also use a grill pan to avoid using any butter. Cook the steak until done (rare, medium, well done, whatever you like). Place the steak on a plate and cover it with thin foil and let it rest for 5-10 minutes. Cut the steak in strips and place them over the salade. Finish is off with some extra fresh coriander, coconut zest and a few drops of chili sauce.
