This lovely dish is a perfect match for a balanced diner (I hate the word diet). I found this recipe on the website of a friend Sha Loves Food. She always cooks lovely dices, so whenever I see a dish that I love and matches my program I share it with you.
What are the ingredients?
about 2 hands of mushrooms
pieces of bacon – replace this with ham slices for a light version
1 red onion
3 cloves of garlic
4 ts cream
dried herbs: thyme, oregano and basle
rasped old cheese
Preheat the oven on 180 ºC. Clean the asparagus by cutting of the wooded part of the bottoms. Make sure to measure them up to the width of the baking dish. Keep the rest of the parts and cut them into small parts. Also cut the onion and the mushrooms. Heat up a pot with water and some salt and bring it to a boil. Put the long asparagus into the pot and cook them for about 10 minutes. In the mean time heat up a pan and bake the bacon (without butter). Bake on a high fire for about 3 minutes and then lower it. Add the mushrooms, small asparagus pieces and onion. Bake everything for about 3 minutes and then add the herbs.
Lightly grease up the baking dish and make a mixture of the eggs, cream and use salt and peper. Add the baked vegetable and bacon mix. Last thing, add the asparagus in length direction onto the bowl. Finish it off with some rasped old cheese and place it in the oven. After about 25-30 minutes is well cooked and ready to eat.
tip Serve this with a fresh salad or just eat it like this. If you have some leftovers then bring it to work the next day for lunch!
